Vegan Gluten-Free Singapore Noodles

There are many traditional dishes associated with Chinese New Year, and among them are long noodle dishes. Long noodles symbolize long life, so it is believed they will bring you good luck when eaten as part of your New Year celebrations. One of our favourites, is Vegan Gluten-Free Singapore Noodles. This recipe packs a lot of nutritional veggies with a warming curry sauce that’s easy to make and oh-so delicious.

We have already featured a great Spicy Honey Garlic sauce that can be served alongside this dish. It is bringing together 2 strong flavour profiles, but they complement each other (provided you can eat very hot sauce). Vegan Gluten-Free Singapore Noodles Recipe

Singapore Noodle Sauce Ingredients

Ingredients:

  • 1 tbsp neutral oil (grapeseed, canola)
  • 1 large onion, sliced
  • 1.5 cup Cabbage, thinly sliced
  • 1 cup grated Carrots
  • 4 garlic cloves minced
  • 1 red pepper, sliced
  • 1 cup baby spinach leaves or bok choy
  • 1 cup Bean Sprouts
  • 1 teaspoon toasted sesame oil
  • ¾ cup of chopped green onions (optional for garnish)

Directions:

  1. Soak 8oz white or brown rice vermicelli in hot water for 3-5 min until softened.  Drain.
  2. Combine Singapore Noodle Sauce Ingredients in a saucepan and cook over medium heat to cook curry spice (approximately 5 minutes). Once cooked turn it down to low to stay warm. 
  3. Heat a large wok over medium-high heat and add neutral oil.
  4. Add onions and cabbage to hot oil and sauté for 1 minute.
  5. Next, add garlic and carrot to the wok and cook for 2-3 minutes.
  6. Add red pepper and cook for another minute.
  7. Finally, add spinach and bean sprouts and cook for 1 minute more.
  8. Add sauce to cooked vegetables in a wok along with sesame oil and vermicelli and toss to heat through and coat noodles with sauce. If the mixture sticks to the pan, add a splash of water
  9. Top with chopped green onion (optional) If you want to up the heat of the dish, you can add some fresh diced chilis as garnish as well.

  • 10 tbsp Bragg’s Liquid Amino or gluten-free soy sauce
  • 1 tbsp Chinese cooking wine or Shaoxing cooking sherry
  • 2 tbsp curry powder
  • 1 tsp sugar
  • ½ tsp black pepper
