Sweet and Savoury Vegetable Stir Fry

When cooking large meals for special occasions, like Chinese New Year, it’s a good idea to have options that cater to those who are either vegan/vegetarian and/or gluten-free. The best way to do that is take a more traditional dish and adapt it like we have done in this recipe for sweet and savoury gluten-free stir fry.

You may think all stir fry is gluten-free but, the sauces traditionally used, do contain gluten and the stock is normally chicken-based. In this, recipe all options are gluten-free and either vegan or vegetarian. We also added wild rice and some sliced almonds to up the protein and add a little texture. Both of these modifications, are gluten-free and rich in antioxidants so they are nutritious and delicious alternatives to the traditional recipe.

  • Wild rice has 24 grams of protein per cup.
  • Blanched almonds have approximately 30 grams of protein per cup.

Sweet and Savoury Gluten-Free Stir Fry

Ingredients for Sweet and Savoury Sauce

Ingredients for Stir Fry

  • 2 cups cooked Basmati, cooked and cooled
  • 1 cup wild rice, cooked and cooled
  • 1 large onion, sliced
  • 2-3 stalk celery, peel and slice on diagonal
  • 1 cup carrot, sliced on diagonal
  • 1 red pepper, sliced
  • 1 bunch of broccoli, stalks removed and cut into florets and blanched
  • ½ cup green onion, chopped (optional for garnish)
  • ¼ cup sliced almonds, toasted (optional for garnish)

Directions

  1. Saute garlic and ginger for 1 minute over medium heat.
  2. Add all other sauce ingredients in a saucepan and cook over high heat until boiling and the cornstarch is cooked (5 min).
  3. Reduce to medium/medium-low and cook until thickened.
  4. Heat wok over medium-high heat and add oil.
  5. Saute onion and celery for 1 minute.
  6. Add carrot and red pepper and cook for 3-4 minutes.
  7. Add broccoli florets and ¾ of the sauce and mix to combine.
  8. Add the remaining sauce if needed and heat through.
  9. Mix the Basmati and wild rice and heat through.
  10. Serve vegetable and sauce mixture on a bed of hot rice.
  11. Top with green onions and almonds for added flavour and texture.

Ingredients

  • 1-2 tbs oil
  • ½ cup Bragg’s Liquid Aminos or gluten-free soy sauce
  • ½ cup vegan chicken stock
  • 1 tbsp honey (for vegetarian) or Maple Syrup (for vegan)
  • 1 tbsp cornstarch
  • 1 tsp rice vinegar
  • 1 tbsp grated ginger
  • 1 tbsp minced garlic
  • 1 tsp sesame oil
  • For variety, add a splash of Chinese cooking wine or sherry (optional)
