Why is the best gluten-free sweet potato and brisket hash recipe a great way to use leftovers? The very small piece of gluten-free brisket we used. The piece of brisket was from The Best Gluten-Free Brisket Recipe. When I make a brisket, I like to use a larger roast than we need for one meal- so I can freeze the leftovers and make more meals. Ways to use up brisket can include hot beef sandwiches, cold lunches, and adding the brisket to add to a dinner salad. I had a 10 oz piece of brisk, which wasn’t enough to stretch any way for 3-4 people. So I wrapped it well in foil, then put it in a ziplock bag, labelled it, and froze it until I needed it. Then making a hash came to mind. Adding the cubed brisket into the gluten-free sweet potato and brisket hash recipe adds protein to your meal without it being so meat-forward.

Also, this is easily a dairy-free recipe, because you can use either plant-based butter or oil to cook the potatoes.

Don’t have sweet potatoes? You can simply use white potatoes, just the same. I have to reduce the amount of nightshade vegetables I eat (eggplant, peppers, white potatoes, and tomatoes); therefore, I choose to use sweet potato- as it is not a nightshade vegetable.

Want to add more veggies to this gluten-free sweet potato and brisket hash recipe? You could sautee peppers, mushrooms, or spinach with the onions. Using other vegetables allows you to use any leftover vegetables that may be languishing in the fridge.

Don’t have brisket for gluten-free sweet potato and brisket hash recipe? You can use any other roast beef leftovers. You could buy a chunk of gluten-free roast beef, pastrami, corned beef, or Montreal smoked meat at the deli counter, cut that into cubes and use the same way. This may be a good way to capitalize on a sale, and it is a fast dinner, brunch, or breakfast dish.

The Best Gluten-Free Sweet Potato and Brisket Hash Recipe

Ingredients:

  • 1 medium onion, chopped
  • 3 large sweet potatoes (or white potatoes), diced (about 6 cups)
  • 10 oz brisket, diced (about 2 cups)
  • 1 tbsp butter or non-dairy butter alternative
  • 1 tbsp neutral cooking oil– I use a blend of canola and olive oil blend
  • 1 1/2 tsp each of salt, pepper, granulated onion
  • 2 large eggs per person

Directions:

  • Wash and peel the potatoes
  • Dice potatoes
  • Place potatoes in a pot
  • Cover the potatoes with water, cook on high, to bring to a boil
  • You want the potatoes to be parboiled
Pro Tip: When you can insert a fork into the potatoes, but with some pressure they are cooked enough
  • Dice onion, and set aside
  • Prep your brisket, by dicing it into a similar size as potatoes and set aside.
Pro Tip: Cut out any excess fat or sinew that might be there. You don't want to bite into any of that
  • Add butter (or non-dairy butter, or oil) to a large frying pan
  • Place the onions in the pan and cook until slightly tender, but not browned
  • Next, add oil to the pan, and add in the parboiled potatoes.
Pro Tip: If the potatoes start to stick to the pan, you may need to add in more oil, a teaspoon at a time as you don't want the potatoes to be oily.
  • Cook potatoes until they get some colour on them, stirring regularly
  • Add in the seasoning, salt, pepper, and granulated onion- stir well
  • To the pan, add in the diced brisket and continue stirring until hot
Pro Tip: You want the potatoes to be slightly crunchy and everything to be hot.
  • Taste the hash and adjust the seasoning to your liking.
  • In another pan, cook 2 eggs per person
Pro Tip: Once I am happy with the hash, I turn the heat to low to keep it warm as I make everyone's eggs.
Pro Tip: I prefer this with a sunny-side-up egg, but it works with scrambled eggs, as well.
  • Plate hash and top with or beside eggs
  • Enjoy
