This gluten-free risotto patty recipe is perfect for a side dish, holiday buffet, potluck dinner, or appetizer. You could make them larger and serve them with a salad as a lunch option, or make them mini-sized and serve on a toothpick as a hors d’oeuvre alongside a bowl of hot Marinara sauce. They would also make a yummy addition to a gluten-free charcuterie board.
You can use leftover risotto, but it can sometimes lose some flavour in the reheating process. This gluten-free risotto patty recipe provides you with a way to reduce food waste and make a delicious accompaniment to any meal or gathering.
If your risotto is vegan or dairy-free, then the patty will as well. This is because we do not add eggs or cheese to the recipe. You can make this with any risotto including bolognese, asparagus, mushroom, or whatever risotto combination you have.
Our gluten-free risotto patty recipe can be pan-fried or air-fried to crispy perfection. Frankly, the air-fry method is even more delicious, less intensive, and easier to make.
The Best Gluten-Free Risotto Patty Recipe
Ingredients:
- 4-5 Cups of risotto- I used our gluten-free mushroom risotto recipe
- 1/8 Cup of chopped parsley
Pro Tip: You can use the herb of your choice or whatever goes best with your risotto. Herbs add a fresh element and elevate the patties. Basil is a great option.
- 1/2-3/4 cup of gluten-free breadcrumbs
Pro Tip: You may need more breadcrumbs, depending on how loose the risotto mixture is.
Pro Tip: Use plain gluten-free breadcrumbs, as gluten-free panko, will add a grainier texture.
- Salt and pepper to taste
- Neutral oil for frying or air-frying
Directions:
- Pour leftover risotto into a bowl. If making it with fresh risotto, keep it in the pot it was made in; but remove from the heat.
Pro Tip: You can freeze risotto for 1-3 weeks, but it must be heated first. Once heated, allow to cool before making it into patties. This is a great hack if you make too much risotto, but don't have the time to make the patties.
Pro Tip: If you are making the risotto fresh, make it a little tighter. Having it not as moist means you can probably reduce the amount of breadcrumbs needed.
- Wash your parsley, dry it well, and mince.
Pro Tip: As stated above you can use any fresh herb you like; however, parsley will work with almost any risotto.
Pro Tip: You can use a food processor if you don't want to chop parsley by hand.
- To the risotto add in the parsley and mix well.
- Next, add 1/2 a cup of breadcrumbs and mix well.
- The risotto should start to form into something that looks more like dough.
- If it seems loose, add in the rest of the breadcrumbs.
Pro Tip: Depending on how thick the risotto is you may need to add more breadcrumbs.
You can test the consistency by rolling a small amount into a ball and flattening it into a patty. If it sticks together well you are done. If not, then add more breadcrumbs 1/4 C at a time. Test the consistency as you go.
- Taste and adjust salt and pepper to your liking.
Pro Tip: If you froze the risotto you will likely have to add at least 1/2 tsp of salt.
- Portion the risotto mixture into even balls- Mine were roughly 1/4 C of dough.
Pro Tip: I made mine larger to use as a starch side dish for my Sunday dinner.
- Pack the risotto mixture into tight balls and flatten slightly into a patty. Using your hand lightly push the sides in to make them more uniform. This is so the edges are less jagged and more uniform, which will help the patty stay together.
- There are two cooking methods: frying or air frying.
Air Fryer Method
- Heat the air-fryer to 450°F.
- Place the patties on parchment paper in the air fryer
- Spray or brush neutral oil over the tops of the patties.
- Air fry for 20-30 minutes then flip them halfway through. Then spray or brush the other side with oil, before returning to the air fryer.
Pro Tip: Cooking times will vary based on the size of the patties, and the temperature of your air fryer. If you are making larger ones like mine they should take 12-15 minutes per side. In my air fryer, the smaller ones still took 8-10 minutes per side.
- Fry until they are golden brown and crunchy.
Pro Tip: Air fryer times vary per machine. So check on them periodically, You can even do one first as a tester to figure out the timing in your air fryer.
Frying Method
- Heat 1-2 tablespoons of neutral cooking oil in a frying pan.
- Fry patties until they are golden brown and crunchy, this may take 5-7 minutes per side depending on the size of the patties.
- Either way, cook until golden brown and delicious and enjoy.
