Fast Gluten-Free Spinach and Garlic Pasta Recipe

Fast and healthy meals are always in high demand, and pasta many times fits the bill. Today we are sharing our fast Gluten-free Spinach and Garlic Pasta recipe.

Our fast gluten-free Spinach and Garlic Pasta recipe contain cheese; however, it does not need cheese, or you can use your favourite alternative.

I love this recipe because the preparation is minimal and it cooks in about 5 minutes more than it takes to cook the pasta.

Variation:
You can sautee 1/4 tsp of dried hot peppers, or a diced-up fresh hot pepper, (or more depending on how hot you eat) with the garlic. This will make the pasta spicy, and add more flavour.

Fast Gluten-Free Spinach and Garlic Pasta Recipe

Ingredients:

  • 1 lb fresh spinach
  • 2 tbsp butter (you can use a dairy-free butter alternative, or simply use more oil)
  • 3 tbsp oil
  • 1/2 tsp each of salt and pepper
  • 3 large cloves of garlic, minced
  • 2 packages gluten-free pasta (I used Rummo gluten-free pasta 360g x 2)
  • 1/2 c Reggiano Parmigiana cheese

Directions:

  • Place a large pot of salted water on the stove to boil.
  • Clean fresh spinach by removing any blemishes and cutting off long steams.
Tip: You can use swiss chard in place of spinach in this recipe.
  • Cut spinach leaves in half and place in a strainer
  • Rinse spinach well, and set aside.
  • Mince 3 large cloves of garlic, and set aside
  • Once the water is boiling in the large pot, add pasta and cook according to the package/ your liking.

Tip: I used long pasta, but long gluten-free pasta tends to break when it’s mixed. To avoid this pitfall, you may want to choose a short pasta like penne, or rigatoni.
  • In a pan that has a lid, melt butter/ heat oil.
  • Add garlic to the butter/oil, and cook until garlic becomes fragrant.
  • To the pan, add the spinach stir and put the lid on so that the spinach can steam.
  • Stir both the pasta and the spinach often.
  • Season the spinach with salt and pepper.
  • Taste and adjust the seasoning of the spinach.
  • When the pasta is cooked, using a heatproof measuring cup carefully remove at least 3 cups of pasta water.
  • Strain pasta.
  • Return pasta to pot over low heat.
  • Pour 1/2 cup of pasta water into the pot.
  • Add the cooked spinach and garlic mixture to the pasta and stir well.
  • If the pasta looks dry, add more water to make a sauce.
  • Take the pot off the heat, add in cheese (optional) and stir well.
  • Taste and season as needed
Tip: If you are not using cheese, you may need to add more salt.
  • Top the platter of pasta with more cheese (optional)
  • Serve
