Ingredients:
For the Breading:
- 1/2c gluten-free panko breadcrumbs
- 1/2C gluten-free breadcrumbs
- 1 tsp salt
- 1/2 tsp each of pepper and granulated onion
- 1/2 tsp baking powder
For the Egg:
- 1 egg
- 1/4 tsp each salt and pepper
For the Flour:
- 1/4c gluten-free flour
- 1/4 tsp each of black pepper and salt
- Vegetable oil– or another neutral oil for frying
- 16 2-inch cubes of baked Macaroni and Cheese- I used the best gluten-free macaroni and cheese recipe but didn’t add the crunchy topping.
Tip: This recipe is based on having about 1/3 of a 9x13 left over, so you may need to multiply the amounts if you require more.
Directions
For the Breading:
- Blitz gluten-free panko bread crumbs, gluten-free bread crumbs, salt, pepper, granulated onion, and baking powder in the food processor until well combined, and the breadcrumbs resemble fine sand.
- Pour breadcrumbs into a shallow pie plate, pan, or bowl.
For the Egg:
- In a shallow pie plate, pan, or bowl, crack an egg.
- Add seasoning and beat well with a fork or whisk.
For The Flour Mix:
- Mix the flour and seasonings in a shallow pie plate, pan, or bowl.
- Mix well using another fork.
Bread The Macaroni And Cheese Squares:
- Cut the cooled (or leftover) baked macaroni and cheese into 2-inch cubes.
- Set up your breading station.
- Next, line up your shallow pie plate, pan, or bowl, of flour, egg, and breadcrumbs.
- Have a clean plate at the other end of your breading station for the breaded squares.
- Cover your squares in flour, ensuring no area is left uncovered. Tap off excess flour.
- Next, dip the floured square into the egg mixture-ensuring no area is left uncovered.
- Place the egg-covered square into breadcrumbs and cover completely. Pat the breadcrumbs in with your hand.
- Repeat until all squares are breaded.
For Frying:
- In a large frying pan, pour about 1/4 inch of oil into the bottom of the pan.
- When the oil shimmers or has reached 350° it is hot enough to begin frying.
- Gently, place the squares in the pan in batches. Place them in an even layer; so they are not overlapping in the pan.
- Fry squares until they are golden brown on all sides.
- Cover a large baking sheet with parchment paper.
- Turn oven to 250°. or warm
- Place the gluten-free fried macaroni and cheese squares in the oven to stay warm, for up to 15 minutes, on a rimmed cookie sheet.
- Once cooked, serve immediately, alongside a small dish with gluten-free ketchup.
