Gluten free cooking can be expensive and time-consuming, which is why I love recipes that use leftovers in new ways. That is why today, we are sharing this gluten free leftover sausage and rice bake recipe.
We’ve used up leftovers in THE BEST GLUTEN-FREE CREAMY PASTA RECIPE MADE WITH LEFTOVERS and THE BEST LEFTOVER MEATLOAF GLUTEN-FREE PASTA BAKE RECIPE. Stir fry is also an easy way to use leftovers. However, this rice bake is economical and delicious.

Though this recipe uses leftover gluten free Italian pork sausage, you can use any sausage you like, even vegan options. You could use other proteins in this dish as well.
Gluten Free Leftover Sausage and Rice Bake Recipe
Ingredients
- 2 pieces of gluten free Italian sausage -mine was mild fennel
- 2 shallots, diced
- 1 tbsp of neutral cooking oil
- 1 clove of garlic, minced
- 2 cups of leftover rice
Tip: I used leftover short-grain Japanese rice, but any rice works
- 1/2 cup of milk- I used 2% milk (or dairy free alternative)
- pinch of salt and pepper
- 1 cup of grated mozzarella
(or dairy-free cheese) - 1 large egg
- 1/4 cup of grated mozzarella for the topping (or dairy-free cheese)
- 1 tbsp of grated parmesan cheese (or dairy-free cheese)
Directions
- Preheat the oven to 350°f
- Slice leftover gluten free sausage into 1/4-inch coins.
Tip: If you do not have leftover sausage, roast sausage for 45 minutes at 375° turning halfway through.
- In a large frying pan, add oil and heat.
- Add the shallots to the pan.
- Soften the shallots.
- Add the sausage to the pan, stirring and letting them warm through.
- Once the sausage is slightly warmed add in the garlic and cook until it is fragrant.
- Meanwhile, in a large mixing bowl, break up your rice so that there aren’t any hard clumps of rice.
Tip: If you don't have leftover rice, cook 2 cups of rice and allow it to cool slightly.
- Add one cup of grated mozzarella cheese to the rice and mix well.
- In a 2 cup measuring cup or medium bowl, beat together the egg, milk, and pinch of salt and pepper.
Tip: Beat the egg and milk mixture with a fork or whisk until they are fully combined.
- Pour the egg mixture into the rice mixture and stir well.
- Mix the sausage, shallots, and garlic mixture into the bowl with the rice.
- Grease a 9×9 square baking dish with either a gluten free cooking spray or by brushing it lightly with oil.
- Pour the rice into the square baking dish and press into an even layer with either a spoon or spatula.
- Mix the mozzarella and parmesan cheese.
- Sprinkle the cheese mixture over top of the rice.
- Place the dish into a preheated 350°f oven.
- Bake for 30 minutes.
Tip: You can place the bake under the broiler for a minute or two to get the top extra bubbly.
