Refined sugar free too!

Gluten-Free Apple Crisp

Camping is one of those things I could appreciate more in my younger days. Not that I was ever a big camper by any means. Sleeping outside on the ground never appealed to me, but count me in for spending time with loved ones, cooking outdoors, sitting around a fire, having a few drinks, and singing or telling stories. Nowadays, if I’m going to spend extended periods of time outdoors and close to the ground, I’m usually in my vegetable garden.

If you do love camping, there is no reason why that has to change because you are living gluten-free. There are plenty of gluten-free food options and we are highlighting some great gluten-free camping recipes starting with my vegan, oat-free gluten-free apple crisp. This make-ahead recipe is perfect for camping as it can be used as a scoop and served for breakfast or topped with a bit of whipped or ice cream for dessert.

It’s satisfying but leaves all the bad stuff out. You are going to love it along with the other gluten-free recipes we are featuring here. Oh, and we also included a few camping tips because we’re just generous like that 😊

Ingredients:

For the filling:

For the topping:

Directions:

For the filling:

  1. Preheat the oven to 350 °F (175 °C).
  2. In a large mixing bowl, blend all the filling ingredients together. Taste to ensure the balance of sugar and cinnamon is there against the tartness of the apples. It shouldn’t be too sweet but now is the time to adjust it to your palate.
  3. Once the flavor of the filling has been balanced, spread the apples evenly over the bottom of a greased 9″ pie tin.

For the topping:

  1. In a different large mixing bowl, mix together all the topping ingredients. It should be the consistency of a slightly wetter than normal crumble.
  2. Once everything is combined, spread it evenly over the apple filling, covering the top.
  3. Bake for 40-45 minutes. The topping should be firm and the apple filling should be bubbling beneath the surface. Once baked, remove from oven and let cool.
  4. The longer the gluten-free apple crisp is allowed to cool, the more time the flavours have to develop and the crisp topping gets crispier. You can serve it as a slice of pie once it fully firms or you can just scoop it out like an apple crumble. Whatever you prefer. It’s delicious either way.
  5. You can cover and store it at room temperature for up to 2 days and even longer if kept in the cooler. This is the perfect make-ahead camping breakfast, snack or dessert option.

Camping Tips for New’ish Campers:

  • You have to menu plan for camping just as you do when not camping.
  • If you are purchasing hot dogs, hamburgers or sausages, make sure you read all labels to confirm that there is no gluten in the fillers.
  • Be careful bringing raw chicken camping to ensure safe food handling.
  • Pack your food in sealable bins to protect it from small bugs and other pests.
  • Fill empty 2-litre pop bottles with water and freeze them for your camping trip. The larger size of ice will take longer to defrost so it will keep your food cool longer.
  • Research your campsite to find one that has the most amenities you are looking for.
  • Find a campsite that is on flat ground and has been cleared of excessive rocks, roots, and sticks that could make sleeping difficult. Designate an area for eating, an area for sleeping, and an area for hanging out.
  • You also want a good tree nearby so you can hang a tarp and somewhere for things to hang dry. The tarp should be hung after the tents to protect you from rain and sunlight.
  • Arrive at the campground with plenty of daylight left to set up.
  • If you have never used any part of your camping gear before, then do a practice run at home. You do not want to get to the campsite and realize something is not working or needs something you didn’t bring.
  • If anything you need takes batteries, bring extra.
  • Bring games and decks of cards in case you find yourself needing help passing the time.
